Vegetable Bean Soup

Combine in a large pot:
1 carton (900mL) Vegetable or Chicken Broth
1 large can diced tomatoes (796mL)
1 red onion, chopped
1 white onion, chopped
1/2 large sweet potato, diced
1 large carrot, skinned & chopped
2 cloves garlic, crushed
1 can (540mL) kidney beans
1/2 cup mushrooms, chopped
1 tsp Italian seasoning
1/4 cup “9-Bean Soup” Lentils (can find at costco)
1/2 cup spinach leaves
1/4 cup Parmesan Cheese

Directions:

1.Combine ingredients in order as given and stir.
2. Bring to a boil, stir regularly.
3. Then allow to sit on low for at least an hour, stir occasionally. The flavours will all blend nicely.
4. Enjoy a nice warm bowl of soup 🙂

Tuxedo Strawberries

These strawberries are so easy and cute to make for a gathering.

Directions:
1. After washing and preparing strawberries for dipping, dip strawberries in melted white chocolate first. Allow to cool/harden.
2. When white chocolate has hardened and cooled, dip each side in dark chocolate.
3. I made the tuxedo buttons with a store-bought brown gel icing tube.
4. Keep in fridge until consumption!
5. Voila!

Spicy Cauliflower Bites

Ingredients:

1/2 large head of cauliflower
3 tbsp olive oil
1 garlic clove, crushed
1/2 tsp pepper flakes
2 tsp chili powder
1 tsp paprika
Pinch of cayenne pepper
1 tsp lime juice

Directions:

1. Preheat oven to 400F

2. Put olive oil in a bowl with a lid and add cauliflower. Put the lid on and shake to coat the cauliflower.

3. Add seasonings/rest of ingredients.

4. Put on baking sheet lined with tin foil.

5. Bake at 400F for ~25 minutes, until browning.

6. Enjoy! We dipped our bites in dijon mustard and I also tried dipping it in plain greek yogurt (my favourite) to help tame the firey bite — was delicious!

Apple Chips

This has been my best creation yet with the new dehydrator. I sliced gala apples and put them in the dehydrator for 12 hours to make apple chips. Then I melted dark chocolate (75% cacao) and drizzled them. Let it dry and voila!… The most delicious chocolate drizzle apple chips.

Well my dried fruit turned out awesome. It was so tasty (especially the pineapple) and I didn’t have to add a single ingredient. However, my dried vegetables were quit bland… I am going to experiment to determine how to make my veggie chips taste better. (If I should be honest…. the green bean resembled the taste of grass).

 

Let the experimenting begin with the veggies and my dehydrator. Wish me luck in developing some tasty seasoning and healthy veggie chips 🙂

Hearty Turkey Chili

Ingredients (serves 12):
2 cans crushed tomatoes
1 can tomato paste
1 can kidney beans, rinsed & drained
1 can chickpeas, rinsed & drained
1 red pepper, chopped
1 red onion, chopped
1.5 cups mushrooms, chopped
1 package (450g) ground turkey
1 tbsp olive oil
4 tbsp chili powder
1 tsp cayenne pepper
2 garlic gloves, crushed
1 tsp oregano

Directions:
1. Start by heating a skillet with 1 tbsp of olive oil. Add in the ground turkey and sprinkle with 1 tbsp chili powder. Cook until done on medium-high heat (when no pink throughout ~15 mins).
2. In a large pot on medium heat, combine the crushed tomatoes, tomato paste, kidney beans & chickpeas (MAKE sure you wash and drain them).
3. When turkey is finished, add it to the pot.
4. In the same skillet, sauté the onion, peppers, and mushrooms ~7 minutes. Add them to the pot when finished.
5. Add in spices – 3 tbsp chili pepper, 1 tsp cayenne pepper, 2 crushed garlic cloves, 1 tsp oregano.
6. Bring to a boil. Then allow to simmer for at least ~30 minutes on low heat.
7. Ready to eat 🙂 I usually add parmesan on top of mine…. because who doesn’t love parmesan?

Cocoa Almond Bars

Mmmmm I don’t know about you but anything chocolate is my weakness. These brownie-inspired granola bars definitely hit the spot when I have chocolate cravings.

Combine in a bowl and mix:
1/2 cup of mashed dates (Microwave with ~2 tbsp of water for 40 seconds to soften for easier mashing).
2 cups rolled oats
1/4 cup coconut oil, melted
1/4 cup almond butter
1 tsp vanilla extract
1 tbsp cocoa powder
1/2 tsp nutmeg
1/4 cup maple syrup
1/4 cup almonds, crushed

Bake at 370F for ~23 minutes!
Optional: Melt dark chocolate chips and spread on top after cooled  🙂
