Cauliflower Pizza Crust

 *This recipe is a low carbohydrate alternative to regular pizza dough.  It can also be made gluten-free.*

TIP: If you do not want to end up eating your pizza with a fork and knife, I recommend going light on the cheese or cooking both sides of the crust before doing your toppings. How? Cook the crust for ~10-15 minutes until browning and then use a plate to remove the crust from the parchment paper. Slide/place the cauliflower crust back on the parchment paper so that the bottom side is now turned up. Bake for ~10-15 minutes again until this side is browning. After both sides are baked – add your toppings and put in the oven one last time.

Prep time: 10 minutes.
Crust Cook time: 10-15 mins (more if you are cooking both sides)
Total time: ~40 minutes

Ingredients:

  • 1 bag of fresh or frozen cauliflower florets (500g)
  • 1/3 cup grated parmesan (from container)
  • 2 tbsp spelt flour (or gluten-free flour of choice.. e.g. almond meal)
  • 1 tsp nutritional yeast
  • ½ tsp garlic powder
  • 1 tsp oregano
  • 1 tsp basil
  • ¼ tsp ground sea salt
  • ¼ tsp ground black pepper
  • 1 egg
  • 1 cheese cloth

Instructions:

  1. Preheat the oven to 450F.
  2. Place the chopped cauliflower florets in the food processor. Pulse for approximately 30 seconds until the cauliflower resembles snow.
  3. Place the ground cauliflower in the microwave-safe container. Microwave for 3 minutes covered.
  4. Remove from the microwave and allow to cool.
  5. Place cauliflower on the cheese cloth and ring out as much water as you possibly can. (Squeeze as hard as you can! The more water removed the better your crust will turn out).
  6. When finished removing the water, place the cauliflower in a large mixing bowl.
  7. Add every ingredient except for the egg. Mix.
  8. Add the egg last and stir until the mixture is fully blended together.
  9. When evenly combined, spread and pack down the mixture onto a baking sheet lined with parchment paper. Make into your desired shape.
  10.  Bake for ~10-15 minutes until browning. Remove from the oven.
  11.  Add your favourite pizza sauce, toppings, and whatever your heart desires!
  12.  Bake for 5-10 minutes. Enjoy 🙂

Kale-Crust Mini Pizzas (Gluten-Free & Nut Free)

Kale Crust Mini Pizzas

I came up with this yesterday as I was looking for an appetizer recipe yesterday! I think I might like the kale crust more than the cauliflower crust pizza!!! Kale has such a mild taste.. you hardly even know that it is in there…except for the green color 😉 This takes the quilt out of pizza – low cal and full of vitamin A, C, K and calcium! You can make this recipe as mini pizzas or as one large pizza.

Ingredients for the crust (Makes 5 mini pizzas):

2 cups fresh kale leaves, washed & trimmed
1.5 cups oat flour
1/2 cup egg whites
1/4 cup mozzarella cheese
1/2 tsp basil
1/2 tsp oregano
1 clove fresh garlic, crushed
1/4 tsp onion powder
1/2 cup water

Directions:
Preheat the oven to 350F.
In a food processor, process the kale and begin to add in the other ingredients. Add in the 1/2 cup water as needed (not all at once).
Mix until you get a moist desired dough consistency.
As you can see below, make into individual pizzas (or make one large pizza).

Bake this crust layer in the oven for ~10-12 minutes until hardening.
Remove from the oven and add your toppings after this is complete (My toppings included: mozzarella, tomato, tomato sauce, onion, mushroom, and pesto.)
When you have added your toppings, bake in the oven again for ~7-10 minutes and broil for the last 2 minutes (to brown the top).

Cauliflower Crust Pizza (Gluten-Free & Nut-Free)

I have posted a Cauliflower Crust Pizza recipe before.. But I changed it up a bit for those of you who are allergic to nuts and couldn’t make it with the almond meal/flour. To be honest, I preferred the crust made with the almond meal a bit more than the brown rice flour. Both crusts are very tasty…. but if I had to choose between the two (and if you do not have any allergies) try my original recipe! — click here!

Crust Ingredients:
1 Medium head of cauliflower
2 tbsp fresh Basil
1/2 tsp Oregano
1/2 tsp Garlic powder
1 egg
1 tbsp egg whites
1/4 cup Parmesan Cheese
1/4 cup shredded mozzarella cheese
1/2 cup brown rice flour (or gluten-free flour of your choice)
1/4 tsp salt

Directions:
1. Chop up cauliflower into fine pieces or use a food processor (yield approximately 2.5 cups).
2. Once processed, put in a covered microwavable container and microwave for 4 minutes.
3. Allow cooling on a kitchen towel. When ready to handle, ring out as much water as possible from the cauliflower using the towel.
4. Add dry ingredients, mix. Followed by the wet ingredients, mix.
5. Use your hands to form it into a dough ball.
6. Lay out the dough on a baking sheet with parchment paper sprinkled with olive oil in your desired pizza shape.
7. Cook at 450 F until golden brown (~10 mins)
8. Remove from the oven and add your desired toppings.
9. Cook for another ~12 minutes at 450 F.

Once you have added your toppings, change the oven temperature to 375F. Bake until the cheese is fully melted toppings are browning. I added chicken to mine — it was precooked on the barbecue.
