Coconut Dark Chocolate Granola

I was looking for a quick and easy granola recipe to make while at the cottage this weekend. We didn’t have very many baking ingredients up there… so I did as I could and this recipe turned out to be delicious!

1). Preheat the oven to 350F.
2). In a large bowl mix:

  • 2 cups Oats (I used Hilray Gluten-Free Oats)
  • 1/2 cup coconut chips (Prana brand found at costco)
  • 1/3 cup chopped walnuts
  • 1/4 cup dark chocolate chips
  • 1/3 cup maple syrup
  • 1/4 cup honey

3). Place in the oven on a baking sheet in ‘clump’.
4). Put into the oven and let it bake until beginning to brown.
5). Mix the granola/spread it out on the baking sheet with a spatula. Mix every so often until all an even brown color (~20-25 minutes).
6). Remove and let cool.
7). Enjoy on its own for snacking, on yogurt, as a cereal, etc.

Blueberry Crumble

(Serves ~6 people)
Crumble Ingredients: (Combine and mix in bowl)
1 3/4 cup oats
1/4 cup honey
1 tbsp chia seeds
1/4 cup almonds
1/3 cup almond butter
3/4 cup brown rice crisps (I used One Degree Brown Rice cereal)
1 tbsp maple syrup
Directions:
1. Preheat oven to 350F
2. Combine ingredients in a bowl and pack into a greased small round pan.
3. Bake for ~30-35 minutes until browning.
4. Let sit and cool while making the yogurt glaze.

Greek Yogurt Glaze Ingredients:
1/4 cup greek yogurt
1/4 cup honey
1 tbsp vanilla
2.5 tbsp icing sugar (sadly I had to use this refined sugar in order to make the glaze!! … but this small amount wont hurt 🙂 )

Directions:
1. Combine and mix ingredients in small bowl.
2. Drizzle over the cooled crumble.
3. Eat warm on its on, with icecream, or store in the refrigerator to harden and eat as a breakfast oatmeal bar.

Carrot Pecan Muffins

Ingredients:

1 cup carrots, grated
1 cup whole wheat flour
1/3 cup ground pecans
2 tsp cinnamon
Pinch nutmeg
1 tbsp coconut sugar
1/2 tsp baking powder
1/2 tsp baking soda
3 tbsp egg whites
1 tbsp coconut oil, melted
1/3 cup maple syrup
1 container dole unsweetened apple sauce (100mL)
1/4 cup raisins
1/3 cup pecans, chopped up

1. Mix together all dry ingredients
2. Blend in the wet ingredients.
3. Fold in the raisins and pecans.
4. Bake at 375F for 20-25 minutes until browning.

Blueberry Bliss Oven Baked Oatmeal

Blueberry Bliss Baked Oatmeal

Ingredients (serves 2):
3/4 cup oats
1 cup skim milk (or almond milk/milk of choice)
2 tbsp maple syrup
2 tsp cinnamon
1/4 cup frozen blueberries
1/4 cup crushed pecans
1/2 banana, sliced

Directions:
1. Preheat the oven to 350F
2. Mix oats, skim milk, maple syrup, cinnamon and frozen blueberries together in an oven-safe casserole dish.
3. Top with crushed pecans and banana.
4. Bake in oven for ~25-30 minutes until oats have absorbed milk/oatmeal consistency achieved.

Almond Crunch Granola

This is my favourite granola recipe yet!.. Almond butter was the perfect ingredient to make crunchy chunks 🙂 So tasty in yogurt or to nibble on its own!

Mix in a bowl:

2 cups large flake oats
1/3 cup almond butter, softened
1/4 cup honey
2 tbsp pure maple syrup
1 tsp vanilla
1 tsp cinnamon
1 tbsp coconut oil, melted
1/3 cup natural almonds
Directions:
Preheat oven to bake at 375F. Mix all ingredients in a bowl. Place mixture on a baking sheet lined with parchment paper. Cook for ~25 minutes (until browning) and stir occasionally.

Maple Pecan Cinnamon Granola

Combine in a bowl:

3 cups oats
1/3 cup coconut oil, microwave for 10 seconds to make liquid
1/4 cup maple syrup
1/3 cup honey
1 1/2 tsp cinnamon
1 tsp vanilla
1/3 cup pecans, crushed

Directions:
1. Preheat oven to 375F
2. Combine all ingredients and mix. Ensure that you microwave the coconut oil for at least 10 seconds to make into a liquid.
3. Line a baking sheet with parchment paper and pour the granola on the parchment paper.
4. Bake in the oven at 375F for ~25 minutes. Mix it around every 7 minutes with a spatula to get even browning.
5. When finished, allow to cool for 10 minutes untouched and it will form into crunchy chunks! 🙂
Enjoy on its own, topped on yogurt, in your cereal, however you prefer!

Carrot Coconut Breakfast Cookies

Pump up the beta-carotene in your morning with these Carrot Coconut Oatmeal Cookies. They are easy to grab on the go.

Ingredients:

1 cup shredded carrots
1 1/2 cup oats
1/3 cup honey
1 tsp cinnamon
1 tsp vanilla extract
2 tbsp egg whites
1/4 cup wheat bran
2 tbsp shredded coconut
1 tsp baking powder
1/4 cup mashed dates, pitted
2 tbsp pecans (optional)

 

Directions:

1. Preheat oven to 375 F

2. Put the pitted dates into the microwave with a tsp of water for 40 secs to soften. When they are done, mash them.

3. Combine and mix all the ingredients in a large mixing bowl.

4. Form into cookies on a baking sheet lined with parchment paper.

5. Bake for 20 minutes, until brown.
