Ingredients (makes ~7 protein balls):
1 cup pitted dates
2 tbsp protein powder (I used Sunwarrior plain vegan protein powder)
1/4 cup carrots, shredded/chopped
1 tsp cinnamon
1/4 cup crushed pecans
1/3 cup ground pecans
1 tbsp raisins
1 tbsp shredded coconut
1 tbsp maple syrup
1. Put 1 cup dates in a microwave safe container. Add 2 tbsp water and microwave for 40 seconds to soften. When finished, mash.
2. When the dates are mashed, add in all the other ingredients and mix until completely combined.
3. Roll into balls and store in the refrigerator. Eat chilled 🙂
